The Pinot Noir of this vintage comes from a plot selection of the best galipes - or plots - owned by Mailly in the Grand Cru of the same name, with grapes from, in particular, Crayats, Coutures or Chalois. It is the unique expression of exposure, soil and know-how, all of which earned it a Vinea d'Or at the Mondial du Pinot Noir in 2005.
After manual harvesting and traditional Champagne vinification, the bottles remain in chalk for several years before dosing at 8 grams of sugar per liter.
The result is a Champagne with spices, violets, undergrowth and orchard fruits. On the palate, it is delicate, silky and has the effect of a homemade whipped cream .
